Mouldy Onions
Dear Aunt Daisy, Last year I pickled onions for the first time, and some time afterwards noticed that some had become mouldy. Some jars were perfect, others had one or more onions with a mouldy surface skin. The mouldy ones were in different positions, on the top, sides, centre or bottom of the jars. The jars were quite full of vinegar. I followed instructions from a cookery book, and I hope to pickle onions again this year, so perhaps you may be able to tell me what caused the mould. Please answer my query in The’ Listener. I am at business and unable to listen to you. Scottie. I can only guess that some of the onions were faulty, as the majority have pickled well. Some recipes say keep the onions quite dry before pickling, so as to prevent mouldiness. Here is good and simple recipe: Peel onions, wipe, with clean, dry cloth, Pack in jars. Put 1 teaspoon sugar and I teaspoon salt in each bottle. Pour over sufficient boiling vinegar. Seal immediately.
