§ FRIAR’S OMELET ® ® ® ® Take 3 apples, 1J oz of but- ® ® ter, 1 oz sugar, 2 eggs (use the ® ® yolks only), the grated rind of @ @ half a lemon, cloves to flavour, ® ® 2 oz of breadcrumbs and castor g S sugar for dusting over the top. ® ® Stick a clove in each apple ® S and bake till tender. ® ® Scrape out the pulp. Beat it ® ® with 1 oz of butter and the ® ® sugar and lemon rind. Leave ® ® until cold. ® S Butter the pie-dish with the ® ® rest of the butter and sprinkle ® ® thickly with breadcrumbs. ® ® When the apple mixture is ® ® cold, beat in the egg yolks and § ® pour the mixture into the pie- ® ® dish. | S Cover with the rest of the ® ® breadcrumbs, putting small ® ® pieces of butter on top and bake @ ® for an hour.
