GREEN SAUCE This is an excellent way of using up the liquid drained from spinach water, as it is nutritious as well as being delicious, the liquid containing some of the iron from the spinach. To \ teacup • ttie liquid, add the hc.iton volk an egg. the juice • ' i sugar and a little butter. Simmer alt together, and serve with ducklings. cutlets, boiled mutton or steak.
