TO-DAY’S RECIPE.

EGGLESS FRUIT CAKE. Eight ozs. or butter or good dripping, Bozs. each of currants, sultanas and brown sugar, 4ozs. raisins, 1 oz. shelled' almonds (blanched), loz shelled walnuts. 1 teaspoon salt, t teaspoon mixed spice, half nutmeg (grated), S pint of xvarm water, 1 teaspoon bicarbonate of soda, i lb. flour (good weight). Put butter, sugar, fruit and nuts with tho water in saucepan and bring gradually to the boil, stirring all the time. Boil gently for live minutes, then leave till quite cold. Sift flour with salt, spice and nuimeg. and stir into tho cold mixture. Lastly add tho bicarbonale of soda dissolved in one teaspoon of warm water. Turn into cake-tin lined with well-butlered paper, and bake in a moderate oven for from 2 to 21 hours.
