TO-DAY’S RECIPE.
CAULIFLOWER FRITTERS. Cooked cauliflower, 1 egg white, A gill cold water, 2 cloves, 2oz. sifted flour. 1 egg yolk, 6 peppercorns, salt lo taste, 2 tablespoons tarragon vinegar, 1 dessertspoon salad oil. Break cauliflower into small sprigs. Place in a basin. Add vinegar, cloves, and peppercorns. Turn sprigs occasionally in the vinegar for 1$ hours. Meanwhile, mix flour to a batter with tlie salad oil, egg yolk, ' and cold water. 'Beat till smooth, i Stand till required, then fold in stiffly frothed egg white. Dip ' drained sprigs in the batter. Fry in deep, smoking-liot fat till golden. Drain as usual, i Serve with any grilled or roast 1 meat. Enough for three or four persons.
