FRIED EGG PLANT AND COLD MEAT. Peel egg plant and cut into very thin slices. Sprinkle with salt and place them all together, then place a heavy weight on top—this will extract moisture. Allow to stand for about one hour. Roll each slice in seasoned flour, then dip in egg and fine breadcrumbs and fry in boiling fat until a golden brown. Drain well and serve at once.
