CHOCOLATE CAKE

DELICIOUS FOR LUNCHEON. Melt 2oz. chocolate in cup boiling water and allow it to become cool. Cream 1 cup butter well, then gradually add 1J cups castor sugar and beat until white and fluffy. Add chocolate mixture gradually, then the yolk of 1 egg. Sift 2 cups plain flour with a good pinch salt, 2 level teaspoon baking soda. Add to butter mixture alternately with £ cup sour cream. Beat until smooht, then add 1 teaspoon vanilla and the whites of 3 eggs, beaten to a stiff froth. Bake in 1 large dish or 2 sandwich tins in a moderate oven for about 25 minutes to 45 minutes for the large cake. Allow to cool and spread with icing, made as follows: Sift 1 cup icing sugar, add 1 tablespoon coffee essence, and 1 tablespoon hot water. Mix until smooth and cold. Now add 2 teaspoons butter and beat until smooth. This can be used as a filling as well as a topping. Sprinkle top with chopped walnuts.
