BAKED ORANGE PUDDING

SOMETHING FOR DINNER. Strain the juice of 4 oranges (11 cups juice) and put in a saucepan with 2 heaped tablespoons cornflour diluted with I cup water and 1 cup sugar; bring to boiling point, stirring all the time until thick and smooth. Simmer for 5 minutes, then allow to cool a little. Add 2 egg-yolks, one at a time, and the grated rind of 1 orange. Beat the eggwhites until stiff and fold into mixture. Turn into a fireproof pie or souffle dish, stand in a pan of water and bake in a moderate oven until firm in centre and well risen. Serve hot.
