A LUNCHEON DISH

BEAN AND NUT CROQUETTES. Soak 1 cup red kidney beans overnight, next day drain and cover with boiling salted water. Cook until tender, then rub through a sieve. Add | cup peanuts or walnuts, finely chopped, or, if liked, they may be put through a mincer. Add 1 cup soft white breadcrumbs, 1 tablespoon melted butter, salt and pepper to taste, and a little grated nutmeg. Bind together with 2 beaten eggs and form into cork shapes. Roll in beaten egg, then in fine breadcrumbs; fry in plenty of boiling fal until a golden brown. Drain and serve with grilled tomatoes.
