BANANA LAYER CAKE
THIS IS SOMETHING TASTY. Cream 4oz butter well, add soz castor sugar, and beat until light and creamy. Peel and mash or mince 5 me-dium-size bananas and add them to 3 well-beaten eggs. Sift Boz plain flour with 2 teaspoons baking powder and a pinch of salt. Add it alternately to butter mixture with egg and bananas, add. vanilla essence and a little grated lemon rind. Bake in 2 greased and lightly-floured sandwich tins in a moderate oven for about 25 minutes. Turn out and allow to cool. Pour a little liquid lemon jelly in a sandwich tin the same size as the cake, allow to set, then cover with thin slices of banana, then add more jelly to cover bananas. Allow to set, then join cakes together. Cover with a thin lemon water icing and decorate top with sliced bananas. If wanted for a sweet, sprinkle banana with half-set jelly.
