A LUNCHEON DISH
SURPRISE EGGS. Boil as many eggs hard as required and roll them in the Following mixture, completely covering them: Mash potatoes well, add the yolk of an egg, a little finely-chopped parsley, pepper and salt to taste, and if liked a little Indy-chopped or minced cold meat or bacon. Roll in egg and breadcrumbs and fry in boiling fat or oil until a ’olden brown. Drain and serve with tomato sauce.
