LAMB STEAKS AND TOMATOES. Procure thick chump lamb chops and -nince finely, using 11b after mincing. Add pepper and salt and 1 small grated onion. If liked, a little chopped parsley and a little shredded bacon may be added. If no bacon is used, add 1 tablespoon melted butter. Form into flat cakes. Place on a greased tin and grill under a very hot griller until a nice brown. Turn carefully and brown the other side, basting well with the fat that leaves the steaks. Dish up and place 1 grilled tomato on each steak.
