TRY THIS FOR DINNER
SAVOURY LIVER & VEGETABLES. Procure a pig’s liver and wash and dry thoroughly. Roll in seasoned flour without cutting it. Place 2 tablespoons bacon fat in a large pan, and when very hot add liver, and brown well all over. Add 2 cups hot water or stock, 3 sliced carrots, 2 sliced onions, 1 cup chopped celery, a very small clove of garlic, a bay-leaf, and, if liked, a little thyme. Cover tightly and bake in a moderate oven for 1 hour. Dish up on a large dish and surround with vegetables. then spinkle liver with very finely-chopped parsley.
