TO BOTTLE PEAS

A RELIABLE METHOD. Young and tender peas are the only peas worth bottling, after shelling, wash and drain well. Place in saucepan with just enough water to cover and simmer for 3 minutes, no longer. Drain well, but save the water in which the peas were boiled. Pack peas in small jars •1 pinin add J level teaspoon salt to each jar. Bring liquid to boiling point and till each jar. Place in steriliser and process for 45 minutes. French beans and butter beans can be bottled with this method and processed one hour. Mushrooms, same process, except that they must be processed for 35 minutes.
