CELERY FRITTERS

A DISH FOR LUNCH. Wash celery, tops and all, and put through a mincer, or chop very finely. Beat 1 egg well. 4 tablespoons selfraising flour, salt and pepper to taste, and 1 cup prepared celery. Add enough milk to make rather a thin batter. Melt a little butter in a small pan. add batter, and spread over bottom of pan. Allow to brown on bottom, then turn carefully and brown the other side. Dish up and serve with shredded bacon or ham sprinkled over top.
