POTATO ROLL

FOR MONDAY'S DINNER. Boil 11b potatoes and mash well. Add seasoning with 1 teaspoon finely-chop- , ped parsley and the yolk 'of 1 egg. Allow to cool, then press out on a floured board. In the meantime mix together 2 cups minced cold meat, 1 teaspoon chopped parsley, 2 minced and fried onions, 4 cup diced and cooked celery. Season to taste with salt and pepper and a little paprika. Spead thickly on potato and roll up like a Swiss roll. Place roll in a greased nut loaf tin cover with greased'paper, and bake or steam 30 minutes. If baked, cooked for 1 hour. Turn out and serve with a good brown sauce.
