The housewife should try these recipes which are sure to appeal:— Grape and Melon Cocktail. To each cup seeded grapes, add 1 cup honeydew melon cut into balls with a vegetable scoop, the sections from 1 orange, a little sugar to taste, and 1 tablespoon lemon juice. Chill thoroughly and serve in tall glasses. If liked, sprinkle the top with crushed after-dinner mints.

Prawn and Spaghetti Ring.

Chop finely 1 small onion and fry for a few minutes in 2 tablespoons margarine, add 2 level tablespoons flour and cook a little, add 1 cup stock (made from the' well-washed prawn shells), and cook until thickens, gradually adding 1 cup milk. Season with a very little salt, pepper, cayenne, a sprig of thyme and 1 bay-leaf, 1 small red pepper and 1 small green pepper, finely chopped, and 2 cups shelled prawns. Allow to get very hot, remove thyme and bay-leaf. Have ready cooked in well-seasoned stock lib packet spaghetti. Butter a large ring mould, sprinkle with breadcrums, fill with spaghetti, and place in oven to thoroughly heat. Turn on to a hot dish and fill centre with prepared prawns. Any savoury filling may be used instead of prawns. Chaud-Froid of Lobster. Remove tail from lobster, cut down each side, carefully remove meat, and cut into thin slices. Chop the body, wash well, and boil with 2 bay-leaves, salt, pepper, and 1 chopped onion. Simmer for 1 hour, then strain through a fine strainer. Melt 1 level tablespoon butter or margarine in a saucepan, add 1 level tablespoon flour, and cook a little, now add 1J cups stock and 1-J dessertspoons powdered gelatine, pepper and salt to taste, the juice of 1 small lemon. Allow to cool a little, then mask pieces of lobster. Allow to set and decorate. Sprinkle with aspic jelly and thoroughly chill. To dish up, cut a single loaf sandwich bread wedge fashion, spread sides and end with margarine, and sprinkle with finely-chopped parsley. Arrange lobster body on this with the head rising higher than the tail. Arrange prepared slices on top of body, garnish with crisp lettuce, claws, lemon slices,- and a few stuffed eggs. Serve with mayonnaise flavoured with a few drops Worcester and tomato sauce. Chicken Ring or Mould Mix together 1 cup fine white breadcrumbs. 2 cups chicken stock, 2 egg-yolks, 4 cups diced boiled chicken, 1 cup finely-chopped celery, 1 green pepper, cut finely, 1 cup finely-chopped ham, 1 cup coarsely chopped walnuts, pepper and salt to taste, a little paprika, the juice of 1 lemon and 1 teaspoon finely-chopped parsley. Place in 2 medium-size ring moulds, set in pan of water and bake in a moderate oven for about 45 minutes. Turn out and serve hot or cold. If served hot, fill centre with asparagus tips, standing upright, if cold a mixed vegetable salad. The carrot baskets may be placed round the base of the dish. Carrot Baskets Scrape and cut carrots into pieces about all the one size. Scoop out some of the centre with a vegetable scoop. Boil in salted water until ten-, der. Cook lib peas and rub through a sieve, season with salt and pepper. Place mixture in a forcing bag made from greaseproof paper and fill carrots. Glaze with a little half-set aspic and set aside to chill. When ready to serve, fix on a handle made from parsley stalks or small pieces of curled celery. Before filling carrots, they may be marinated in French dressing. Spiced Pears Boil 1 cup sugar, 2 cups water, 1 sliced lemon, piece of stick cinnamon. 6 doves, a very small amount whole mace, and a small piece of whole ginger. Simmer for 5 minutes. Colour syrup with cochineal, add small peeled pears (whole), and simmer until tender. Remove pears and cook syrup until very thick. Strain over pears and serve very cold.
