PINEAPPLE PARTY GATEAU

A DAINTY DISH. Take 3oz butter, 3oz sugar, 1 egg. 8 oz flour, 1 teasp'oon baking powder, and pineapple juice to mix. Cream the butter and sugar, then add the flour and eggs alternately. With the last of the flour add the baking powder and mix to a dropping consistency with pineapple juice. Put the mixture into a square cake tin lined with greased paper, and bake in a moderate oven for about one hour. Cool on a cake-rack, then cut across horizontally and fill with the following: Take -J- pint milk, I dessertspoon cornflour, pineapple juice, 1 egg-yolk, little sugar, pineapple. Blend the corpflour to a smooth paste with a little of the milk. Heat the rest in a small saucepan and when boiling pour over the cornflour. Return to the saucepan and cook until thick. Stir in sufficient pineapple juice and chopped pineapple to flavour, and sugar to sweeten. Lastly 7 add the yolk of egg, and beat until smooth. Allow to cool and spread this filling in the cake. To make the cake really "party,” ice the top with glace icing mixed with pineapple juice, and decorate with a few cubes of glace pineapple.
