VEGETARIAN MEAL
SOME TASTY DISHES.. Now Zealanders are always being accused of eating too much meat, so now that meat is expensive and eggs are cheaper, it would be a very good time to plan a meatloss meal now and then. Here arc some tasty luncheon dishes to try. Savoury Onion CustardOne and a-half pounds white onions, 2 eggs, loz butter, 1 cup milk, salt, cayenne. i Melt butter in frying-pan, add sliced, onions. Cook without browning for 12 minutes. Stir well. Drain and put into fireproof dish: Beat eggs, add salt and cayenne with milk. Pour over oriicns. Bake- in a slow oven till set. Serve at once. Cheese and Potato Pie. Ono and a-half pounds cooked potatoes, 2 hard-boiled eggs. 4oz grated cheese, loz. butter, loz flour. 1 pint milk, salt and pepper, browned crumbs. Cut potatoes into fairly thick slices, put in layers in a buttered piedish, with slices of hard-boiled egg. Melt butter in a saucepan, add flour, stirring till a smooth paste is formed. Add milk, stirring till it boils. Boil fpr three minutes, add 3oz cheese, and the seasoning. Pour over the eggs and potatoes. Sprinkle the ' remaining cheese, then crumbs on top. Bake in a hot oven for 20 minutes. Vegetarian Cutlets. Four ounces lentils, 4oz potatoes, 2 onions, 3 cups stock, salt, cayenne, breadcrumbs, egg-glazing, fat, 1 egg. Soak lentils in stock} add prepared onion and boil till soft. Add cooked potatoes and put through a sieve. Add salt and cayenne and 2 tablespoons breadcrumbs and beaten egg. Mix well and leave till cold. Form into cutlets, dip in egg, then crumbs and fry in boiling fat till golden brown. Drain, insert a small “bone” of macaroni in each, and add a cutlet frill. Spinach Souffle. One cup cooked spinach, 1 dessertspoon grated cheese. 4 tablespoons butterfi 4 tablespoons plain flour, 1 cup milk, 2 eggs. Melt butter in saucepan, add flour off the heat, stir till free from lumps. Cook without browning, add milk all at once, and stir till it boils and thickens. Add yolks, spinach, cheese, salt and cayenne, cool, add stiffly-beaten whites, pour into souffle dish and bake 35 minutes. Serve at once. Sweet Corn Rarebit. One tin sweet corn (1 cup), 1 egg, 1 small piece onion, 1 tablespoon grated cheese, 4 medium-sized tomatoes, 1 level tablespoon butter, j teaspoon salt, pinch pepper, rounds of friend or toasted bread. Melt butter in saucepan. Add chopped onion and tomatoes. Simmer until mixture is reduced to half. Stir in the corn and simmer for 5 minutes. Beat eggs lightly and add. Stir over low heat for 1 minute. Heap on fried or toasted bread, sprinkle with grated cheese and brown in oven or under griller.
