CHRISTMAS PUDDING
LAST-MINUTE EFFORT. Early this week is the very latest time to make a Christmas pudding. Here is one for 12 people, and it shouldn’t cost more than 6s. Mix together Jib each of breadcrumbs. flour, currants, sultanas, and mixed peel. Also 11b raisins (weighed after they have been stoned) and lib shredded suet. Add a pinch of salt, a teaspoonful of mixed spice, \4ozs finely chopped almonds, and the grated rind and juice of one lemon. Beat up two eggs in a pint of liquid. Old ale is the first choice, beer next, or else brandy flavoured milk. Stir this into the other ingredients, and after careful mixing, stand aside for two hours, and then stir well again. Put into a greased basin, filling completely, and being careful not to press down the mixture. Cover closely with grease proof paper and with a floured pudding cloth. Steam for ten hours. It is essential to store such a pudding in a dry, warm place. On Christmas Day boil for two hours. .
