When making jam or chutney, stir with a potato-masher and leave the masher standing flat in the middle of the preserving pan. This prevents the contents from burning.
Stir in the egg whites last when making sponges. Failure is often caused by adding the ingredients to the whites instead of the reverse.
Brush beaten egg on the under-side as well as on top of the crust when making pastry. This prevents the paste sinking on to the fruit.
Stand fruit pies ’in a tin of water when cooking, and they will not boil over.
To keep meat sandwiches moist and fresh, spread a little mayonnaise on the sliced bread before it is buttered. This also imparts a piquant flavour.
When cleaning windows use an ordinary rubber sponge; it is more effective than cloth.
Always use the back of a knife when scraping the pastry-board and rolling-pin. This avoids raising splinters. Steep new curtains overnight in coldwater to which a handful of salt has been added, then wash in the usual way.
A tablespoonful of borax placed in the copper before boiling up makes the clothes whiter.
