VEGETARIAN DISHES. Cheese Fondu. One cup breadcrumbs, 1 cup milk, 1 cup grated cheese, 1 teaspoon minced onion, salt and cayenne to taste, 2 eggs, 1 tablespoon butter. Put breadcrumbs into pie dish, boil the milk and pour over the crumbs and add the cheese, onion, salt and cayenne. Beat yolks of eggs and add them. Whip the whites of eggs stiffly and fold into the mixture. Dot over the butter and bake in moderate oven 20 minutes. Luncheon Pancakes. One large potato, 1 onion, salt and pepper, 1 teaspoon chopped parsley, 1 egg, flour, 1 small teaspoon baking powder, tomato sauce. Grate the potato, mince the onion and flavour to taste with salt and pepper. Add the parsley and the wellbeaten egg and sufficient flour to make a nice batter. Then stir in the baking powder. Fry like pancakes until golden brown and serve with hot tomato sauce. When in season, add a peeled and roughly-chopped tomato to the pancakes. Rice and Cheese Pudding. One onion, 1 cup rice, 1 egg, 1 cup grated cheese, 1 tablespoon butter, a pinch of pepper and salt. Peel onion and boil in two cups water for 10 minutes, then add rice and cook for 15 minutes. Strain and remove the onion. Beat egg, add rice and remainder of ingredients and mix thoroughly. Put into a buttered pudding basin, cover with buttered paper and steam for one hour. Turn out on to a hot dish and serve with cheese sauce (white sauce, to which a tablespoon of grated cheese has been added). Lentil Rolls. Four ounces lentils, 2 ounces breadcrumbs, 1 ounce butter, 3 ounces mashed potatoes, 1 egg, | minced onion, salt and pepper to taste, jib short pastry, tomato sauce, chopped parsley. Blend ingredients together thoroughly, with the exception of the sauce and parsley. Roll out pastry fairly thin and cut into eight equal pieces. Divide mixture evenly on each piece and fold over like a sausage roll. Brush over the tops with a little beaten egg or milk, and bake 20 minutes in moderate oven. Serve with hot tomato sauce and garnish with chopped parsley.
