KITCHEN KINKS
To Cream Butter. To cream hard butter quickly for a cake, put it through a potato ricer first and then cream in the usual way. A Nice Flavour. Dip lamb chops in lemon juice before broiling. It gives them a nice flavour. A Quick Sprinkle. Sprinkle cottons for ironing with warm water, using a whisk broom. A whisk broom distributes the moisture evenly. A Halfway Shelf. A little halfway shelf is convenient in the kitchen. Have the shelf just wide enough for spice cans, small salt cellars, and the like, which sometimes get hidden in cupboards. It is so narrow that it does not interfere with the shelf above or below. Upside-Down Cake. Whenever the last of the cake happens to have dried out, turn it upside down and ice the new top with fresh icing. It seems that the whole cake is mellowed by this process and can be served without apologies.
