SARDINES

SCANDINAVIAN DISHES. These dishes are great favourites in Norway:— Sardines With Spinach. Flake in small pieces 1 tin Norwegian sardines. Melt 2 tablespoons butter in frying pan and brown 4 cup fine bread crumbs in it. Add 2 cups cooked spinach and the flaked sardines. Moisten with A cup water in which spinach was cooked. Add j teaspoon salt and i teaspoon pepper. Serve hot garnishwith Sliced hard-boiled egg and whole sardines. Serves 6. Brevik Bake. Wash 1 cup brown dr white rice in several waters. Boil rapidly five minutes. Drain. Rinse in cold water. Turn into buttered caserole. Pour over the' rice 1 cup milk mixed with 1 teaspoon curry powder and ,1 teaspoon salt. Arrange contents of T tin (3 or 4oz) smoked Norwegian sardines on top. Bake 3 hour in moderate oven (350 degrees F.) with cover on baking dish until the last 10 minutes. Eggs Saga. Cut into slices 6 hard-cooked eggs. Make 1 cup rich cream sauce. Open , 1 tin (3 or 4oz) smoked Norwegian sardines. Arrange slices of eggs and sardines in alternate layers in a buttered baking dish, covering each layer with a portion of. the cream sauce. Top with Buttered crumbs and bake in a moderate oven (350 degrees F.) for 30 minutes.
