Christmas Cake, lib. butter, 1-llb. flour, 21b. sultanas, ilb. lemon peel, 1 teaspoon cinnamon, 1 tablespoon golden syrup, essence of lemon, 1 teaspoon , cream of tartar, lib. sugar, 10 eggs, lib. raisins, almonds, -1- teaspoon soda in one tsrblespoonful of hot water. Method: Cream butter and sugar, add eggs one at a time and beat well, add golden syrup. Sift flour and cinnamon and cream of tartar and add to mixture. Add soda dissolved in hot water and lastly add chopped and well-mixed floured fruits. Bake in a greased and papered tin. Place on the middle or lower shelf of oven with the regulator at - No. 3, or in a slow oven. | The time of cooking will depend upon the size and thickness of the cake mixture and whether baked ! in one or several tins.
