FARM AND DAIRY.

NEW CHEESE FACTORIES. The cheese factories erected by the Mangatoki Co-operative Dairy Company at Mangatoki, CVlatapu and Mahoe, are now all in operation, and are very thoroughly equipped (says the Hawera Star). The ,main factory is located at Mangatoki, and is a very substantial building

of all-heart totara. resting on concrete foundations 4ft high. - The making-room —95 x 40—contains, nine vats, a aweetwhey tank, 22 x 7 and sft deep, constructed of concrete, lined with tin steel, and a bathroonj for the men. There are two receiving stages. The factory contains, also, ai packing-room, 35 x 21, hoop-receiving rqom, 30 x 17, and a curing room, 80 x 3(3. The latter is an excellently constructed room, designed to maintain an even temperature. The walls are constructed of weather-board-ing on the outside, 4x2 studs, inch lining, with p. and ;h. paper; then 3 inches of pumice, .inch lining, p. and h. paper, and finally t.'and g. lining. The windows are all fitted with "a double pair of sashes and louvre shutters. The storing capacity of this room is 2900 cheese.,?. In .the ; Mangatoki factory, as with the Mahoe and Matapu, care has been taken in the designing to permit of Lin; present power being available for either the cheese,or butter plants. The whey is pumped from the separators into tanks constructed of 3-16 in boiler plate. At the Matapu factory the making room is 86 x 40, with eight vats and two receiving stages, and at Mahoe the making room is 70 x 32, with two receiving stages. Mr.J. A. Duflill, architect, Hawera, designed the three factories, and the construction and general design appear to be all that could be desired. The Mangatoki Company have gone thoroughly in!::. ,Mails, and there is a completeness about these new factories which is very noticeable.; Mr. P. M. Grayling, of New Plymouth'.-was the contractor.
