FROZEN RABBITS

William McLcod Kean's small consignment of unfrozen Australian rabbits, killed a year ago, on being opened proved sound and eatable. Briefly, Kean's process is the removal of tile spinal marrow, after which the carcase is washed and dried. The rabbits are also preservable in a moist condition, in which case they aro packed in barrels, lly either process the rabbits will keep indefinitely. The scheme is considered a solution of the rabbit dilnculty, inasmuch as carcases can be pre-, served in any part of the country, irrespective of distance from a railway, and shipped direct to Loudon.
