This year complaints si(a3 been more marked than before, aa even in. the best samples rapid deterioration took place, owing to bacteriological action after defrostflnfjf. This emphasized th« necessity foi; an experimental , station where proper investigation' couSd be made. The cheese exfiibit at this show was a large one, but quality was unsatisfactory. The defect in the majority of cases was in ■ flavour ; this might 'lie attributed to' the. absorption of bacteria , whteH gained indirect access to the milk. There was alsia a great deal of room for improvement in the general make* up of the cheese.
