DAIRY CONGRESS

New Zealand Representation Press Association-—Copyright. Wellington, May 21. The Minister o£ Scientific and In. dustrial Research, Hon. D. G. Sullivan, announced to-day that arrangements had been -made for Dr. H. G. Whitehead, bacteriologist at the Dairy Research Institute at Palmerston North, to- officially represent New Zealand at the eleventh world dairy congress to be held alt Berlin in August this year. Dr. Yyhitehead will leave New Zealand by the Aharon on Tuesday. An invitation was received: by the Government .for New Zealand to participate in the congress, and the Dairy Research Institute’s l management committee was unanimously of the opinion that in view of the im. Pohtance of the discussions to thp industry New Zealand should be officially represented, At the request of the institute the. Government decided to release Dr. Whitehead, so that he may .attend the congress. The expense of his visit will be borne by the ins itute, the major portion of whose funds- is provided by Uie Dairy Board, representing the industry. The congress meets at different world centres once every three years, but the meeting at Berlin this year •s specially important because the delegates will hiave the opportunity ■of investigating the German dairy Indus' ry at first hand. Dr. Whitehead has been specialising in investigations on the openness of cheese, which is a problem of great importance to the dairy industry of New Zealand, and i s also making investigations on the‘relation of starters to flavour. He has met with a considerable degree of success in working out a method to prevent openness in the cheese and will take advantage of his visit abroia.d to study the work being done there, which has a bearing on these prob.’ terns.
