WEIGHT OF CREAM TO A POUND OF BUTTER.

Lvst month wo received an inquiry from a subscriber as to the weight of cream required to make a pound of butler. Wishing to make somo inquiries to confirm our own calculations we delayed the reply till now. The weight of cream per pound of butter varies according to tho method of creaorj raising employed, and the care with which tho -cream skimming is done if the old method -of setting milk is followed. Therefore the, best .plan will be to take as a ba^is .for. calculation separated cream — that** is cream obtained by a centrifugal cream separator such as the Laval. Of such cream, .from 2^lb to 31bs of cream will bo required to make a pound of butter. This is tho experience of Mr Reynolds, of Henry Reynolds and Co., the well-known Waikato butter manufacturers, and of the manager of the Auckland Dairy Association, whom we consulted on the subject. This estimate is confirmed by some figures we published in our January number for this year, page 3, whero we print a summary of tho iirst year's dairy record of the Royal Agricultural College at Cirencester. From that record it will be seen that 4,2971bs of cream yielded 1,6591bs of butter, which is a little over 2^l bs of cream to the pound of butter.
