CRYSTALLISED VIOLETS

Crystallised violets are expensive to buy, but can be made quite easily at home. The season will soon be here, so put. this recipe away for reference. First make a syrup by boiling together lib of lump sugar and two or three tablespoonfuls of water. Remove the stalk from the violets, and when the syrup becomes brittle directly a little Is dropped on a plate stir them into it. Keep stirring until the sugar leaves the flowers, then drain, well, spread on a sieve or wire tray, and dry off in a cool oven. Store in an airtight tin lined with waxed paper. These Violets make delightful decorations for cakes and trifles, as well as being a favourite sweetmeat!
