Here is an economical as well as I tasty and delicious dish: Prepare and joint a rabbit, then fry the joints brown (in two tablespoons of good olive oil preferably). Fry 4oz of lean ham (which has been cut into dice) slightly, in the remainder of the oil. Put 2oz of beef dripping into either a glass or earthenware casserole, and when hot, cook in it 4oz of rice (washed, of course), also a finely minced small onion. Add three medium-sized tomatoes, ! cut into quarters, and just cover all with stock. Allow to cook gently for l>Q minutes, then add the ham and rabbit, putting the meat in the centre and piling the rice on top. Replace the lid and allow to cook until tender. If necessary add a little more stock.
