BETTER BUTTER
MAKERS TEST MANY SAMPLES GRADERS AT WORK * The mysteries of grading were explained this morning to about 30 first assistants from provincial butter and cheese factories at the Government grading stores on King’s Wharf. The chief grader, Mr. E. C. Wood, who was in charge, believes that next year butter and cheese demonstrations will have to be held on separate days, so great is the interest taken by managers. This will also enable closer attention to be paid to detail and to individual instruction. The lessons to he learned through this opportunity to compare the makes of various factories were stressed by Mr. A. J. Garry, president of the Auckland Provincial Dairy Managers’ Association. It was only by such means that managers and assistants realised how their own brands might he improved. Samples of 37 different makes, already graded by the department, were then tested, points being allowed for flavour, body and moisture, salting, colour and finish. The visitors were able to compare their results with those of the official graders. Mr. J. B. Wainscott was in charge of a similar demonstration in the cheese section. ,
