HOSPITAL NEEDS . RE-ORGANISATION WANTED The importance of the kitchen is emphasised in the annual report of the medical superintendent, Dr. C. E. Maguire, to the Auckland Hospital Board:— “The reorganisation of the main hospital kitchen is an urgent matter,” he states, “and will require very serious consideration. Provision will have to be made for a diet kitchen, where special diets can be prepared and where the nurses-in-training can be instructed in the art of invalid cookery, which would obviate their having to attend the Technical College. “The installation of a refrigerating plant is a necessity in order to provide for the effective storage of milk, eggs, fish and meat. The present cool chambers are not satisfactory. “Electric mixers and potato-peeling machines should be installed in the reconstructed kitchen.

“Space should be allotted for the housing and proper cleansing for the numerous food conveyors in use throughout the hospiaal.” “A dietitian should be appointed to take charge of the kitchen, and a change from a male to a female staff should be seriously considered. The kitchen of the Christchurch Hospital was inspected within the last few months by some of the members of this board, who were able to appreciate the value of having a dietitian and a competent female staff.”
