VEGETABLE VALUES * In choosing vegetables for the week’s menus, it is useful to the housewife to know their medicinal properties. Tomatcfes act on the liver, and are an excellent cure for dyspepsia and indigestion. Onions and leeks increase the saliva and gastric juice, and so aid digestion. Cabbage, greens and olives have an excellent laxative action. Spinach is of the utmost value for any kidney complaint. Turnips and carrots are the best vegetable foe people with weak chests. Lettuce and cucumbers cool the blood. Sufferers from insomnia should eat lettuce at supper-time to induce sleep. Celery acts on the nerves, and is a remedy for neuralgia and rheumatism. Watercress and lettuce, eaten with wholemeal bread and in salads, are the most valuable tonic possible for anaemic people. Beetroot is most effective for encouraging a jaded appetite after illness. Asparagus purifies the blood. Radishes contain salts particularly valuable to the human body, and i should be eaten much more freely than 1 they are in most households.
