PUBLIC SERVICE ASSOCIATION. \ Peb Phesh Association. Wellington, May 22. A circular is being sent out by the Public Service Association to civil servants appealing for continued contributions to the fund for disabled men and the dependents of those killed at the front. Contributions have latterly fallen off. and therefore members of the Public Service are asked to set an example which may well ho followed by other members of the community.

CHEESE V. BUTTER.

Wellington, May 22. The , demand for cheese for the British Army has effected a remarkable change in the dairying industry. in Otago and Southland, in common with other pastoral districts, throughout the Dominion, there has been, a notable increase in the manufacture, of cheese, and it is.stated that one company is establishing thirtythree cheese factories in a southern district in order to cope with the abHQim|iJ,demand. Creameries are being converted into cheese factories, as there is much more profit in the manufacture of cheese for export. A representative of the industry explains that while it takes two and a-h(\lf gallons of milk (approximately) to produce one pound of butter, which realises 1 Id in the whoelsale market, it required only about one gallon to yield a pound of cheese worth ninepence. Therefore, it requires no laborious calculation to show why it is more profitable nowadays to manufacture cheese in preference to butter. He is of opinion the tendency in the future will lie materially to decrease the output of butter for export, as the experience of Canadian dairymen in normal times lias been demonstrative of greater profit from the manufacture of cheese. It is thought that before the Spring in New Zealand, the price of butter will again lie increased.
