Method. — Sterilise jars and lids ]ay boiling 20 minutes. Wash fruit, remove tips and stems. Simmer fruit in one cup of water until soft (about five minutes). Overflow jars and seal tightly. Fresh, firni, ripe fruit only must be used. Preserved Beetroot. Ingredients. — ljlb cold cooked beetroot; l»lb raw onions; vinegar. Method. — Sliee beetroot and onions thinly; pack in a sterilised 21b jar in alaernate layers of onions and beetroot; cover with vinegar and allow to stand for three days before using. Seal.
