SURPRISE SARDINES

Ingredients. Half-dozen hard-boiled eggs, 5 dozen sardines, loz. butter, lemon juice, salt and pepper, parsley. Method: Boil the eggs for 15 minutes; put into cold water. When cold, shell carefully; cut each egg in half. Take ,out the yolks without breaking the whites. Bone and chop the sardines. Mix with thesyolks of eggs, butter and seasonings. Fill the whites with this-mixture; put the two whites belonging to each egg together so that they look lilce whole eggs. Dish in a circle standing up. Cut the end of each egg to make them stand. Garnish the centre and round with parsley and serve- hot.
