THE BUTTER MARKET.

Messrs E. Griffiths aud 00., of New Plymouth, have received the following from Messrs Mills and Sparrow, dated 17th May:—You will jiote on the market report which we are sending out to-day that all best butters are selling up closely, Danish if anything in short supply and very serious competition comes up between the tinners who at this season of the year buy fair stocks and tin for the yearly consumption and the buyers who buy for this side men we would not be at all surprised if there was a slight advance during the next week, but this is of course problematic. The fact is, that Danish butter, particularly the choicest, is selling* well, and is wanted! 'The same applies to Sibo riau butter, to Irish and the choicest quality of French. In fact, all best butters are clearing, the only difficulty being with anything of a secondary character: those are accumulating, and wo fear quite a quantity will ho put Into cold store and must of necessity bn hold over during the summer unless very low prices are accepted, because the ordinary trade to-day are not taking these butters to put over the counter, the fresher made butters being piore popular, sd that if those bntffira halt to be sold they would have to he sold to speculators, who would •|n their turn hold them over for some favourable market, Whether holding these butters over will be advantage • ous or not is of course quite au open question, as it is impossible for any,one to say just hour the make in' Siberia, will be, or what quantity will be produced iii Franco, Ireland db at Homo. Everything at the pyosnt moment, .however, points to a good make, and wo should say given S fair" season "that there will be increase in the make in the countries we have mentioned over last year; on the other hand w<3 lifrye to put against this, there is unquestionably ah increased consumption going on, and the consumption of butter by the middle and lower classes is increased year by Jyear and pretty rapidly; the reason of this we think Is pretty evident, viz., that with all the facilities for cold scoring and the extra care which is now being’taken pf the butters by the agents' aud by the'purchasers, tends to make the butter more popular, and more is eaten because it gets to the table in better condition, and lias of necessity a very much better and more palatable flavour- thanSvlien as in the old 1 days it was loft lying about for days, weeks and in some eases months. Take opr own ease, for example, v;b sell a man 20, -10 or 50 boxes, as the case may bo. They are kept in our cold store, ho has thorn homo two or three at a time ns he wishes, and ho only pms them on the counter from our store as lie wants them and they aye nor allowed to deteriorate iu any way j this Is becoming oaoli year more and more the custom amongst the retailers, so that though of course there is a limit to all things wo look for a still further increase in the consumption of butter aud we see no reason why larger quantities should'not'"bo required in bite near 'futeufo. [Messrs Mills aud Sparrow have a larger and mora-up-{bidate cold storage plant aud premises’ than any other firm in the at Home. \
