CHEESE AND BUTTER.

SEASON’S PROSPECTS. Some remarks as to the relative prospects of cheese ancl butter this season were made lasc week by one who has had occasion for some years past to study the markets closely. He said that in his opinion cheese was likely to give a better return this season than butter. He had noticed that whatever one of the two was out of favour with the dairy farmers at the beginning of the season usually panned out best by the end of the season, and cheese at present seemed to be finding only second favour to butter among the producers.
