VEGETABLE SALAD
rYN a bed of shredded lettuce arrange the following vegetables previously cooked, chilled and covered with French dressing. In the centre place a tiny mound of blood beets cut m fancy shapes, then a circle of French peas, next carrots cut m narrow strips, and then celery cut ,into small dice. Surround with a border of rice, garnish with chillies or red peppers. Serve with a mayonnaise. Cabbage may be used m place of lettuce.
