Sponge Fillings
All children and most adults relish sponge sandwiches, and sponge making is a favourite pastime with most cooks. Sandwich fillings can be varied in a great number of ways, of which tho following will prove a welcome change to the usual cream or lemon cheese fillings: — Butter filling.—lngredients: 3 tablespoons icing sugar, one tablespoon butter. Beat to a cream, and beat thoroughly. Add essence of vanilla and spread between sandwiches when they are cold. Orange filling.—This is made with the same ingredients as for butte? fillings, except that vanilla is omitted and finely grated rind of orange is added. Chocolate fillings. —Ingredients: Two tablespoons icing sugar, one tablespoon butter, one tablespoon cocoa. Proceed as for butter filling, but omit the vanilla. Coffee fillings—This is made m exactly the samo way and with the same ingredients as for chocolate filling, except that cocoa is omitted and ono heaped teaspoon of coffee essence added.
