MARSHMALLOW CREAM ►Soak one tablespoonful gelatine in halfcupful cold water. Put three-quarter-cupful cold water on to boil, add two cupfuls sugar, and stir until it bqils. Stop stirring and continue boiling until a little spins a thread when tested in cold water. Add tho soaked gelatine and stir until dissolved. When cool add one teaspoonful of vanilla essence, and beat tho mixture until it is thick and white. Whip the whites of two eggs to a stiff froth, fold into the gelatine mixture. Store this mixture in a covered glass jar. It is excellent for serving on fruit salads, steamed J puddings, and as a filling for cakes.
