A RECIPE.

Chop 12oz cold meat into small dice; melt 1 heaped tablespoon butter or good dripping in a pan, add 2 chopped onions, and fry until a light brown; add 2 teaspoons curry powder, 1 tablespoon flour and cook a little longer. Now add 1- pint stock or milk and stir until quite thick. Now add meat and 4 oz cooked rice. 1 teaspoon chopped parsley, 1 tablespoon sultanas, salt, and pepper, and the grated rind of i leinon and 2 teaspoons lemon juice. Form into balls and dip in egg and breadcrumbs and fry in boiling fat until a golden brown. Drain well and serve with a curried flavoured sauce.
