Peel G large baking apples and scoop g out the core, continue to take more l| of the centre, leaving a wall about';l 1 inch thick. Tin’s is quite easy if j B you use a vegetable scoop (the same 11 as used for scooping out melon). Place!! the scooped-out apple in a casserole jE dish with 1 teaspoon butter, place on 1 £ lid and cook in oven till soft. Rublj through a sieve, then add & cup fine|l white breadcrumbs, £ cup each chopped 'I raisins and dates, grated rind and j B juice of 1 lemon, a little ground cin-J| namon, and if liked 1 teaspoon brandy. l| Fill cavity, roll in } cup melted butter,'g then in sugar. Repeat this again, then I bake very slowly until tender, basting J them well all the time with the syrup | that flows from them. Serve cold with I cream. I f
