PRESERVING CUCUMBERS IN BRINE

S.R., Manakau —Please inform me whether there is any way, other than pickling, of preserving cucumbers in the whole state ?

The Horticulture Division — Cucumbers can be preserved whole in brine. The brine is prepared by stirring salt into a sufficient quantity of water until a potato will float ,on the liquid. The brine is boiled for fifteen minutes, and left to cool before putting it in the cask. Then fill with cucumbers. The head of the cask must be strongly fixed or weighted, to keep the cucumbers below the surface.
