Ladies' Column.
HOME CAKE (WITHOUT EGGS). This is a useful and economical family cake. Required : Three-quar-ters of a pound of flour, three ounces of clarified, beef dripping, a quarter of a pound of currants and sultanas mixed, two ounces of chopped peel, three ounces of sugar, one heaped teaspoonful of baking powder, half a teaspoonful of milk. Mix the dry ingredients in a bowl. Cream the dripping and sugar ; slightly warm the treacle and milk so that they blend, and stir into the dripping and sugar. Gradually beat in the dry Ingredients, put into a greased tin, and bake from one and a half to two hours. SCOTCH SEED CAKE. Required : One pound of butter, six eggs, three-quarters of a pound of caster sugar, one pound of flour, three ounces of carrawaya. Cream the butter and sugar, gradually add the flour by spoonfuls, the eggs one by one, lastly the carraways ; beat thoroughly for ten minutes with a wooden spoon after all the ingredients are mixed. Line a tin with greased paper, pour in the mixture, and bake in a moderate oven for about two hours. GINGERBREAD LOAF. Required : Two pounds of flour, half a pound of butter, half a pound of moist sugar, one pound of treacle, half an ounce of carraways, one ounce of ginger, four eggs, one dessertspoonful of carbonate ,of soda dissolved in half a teacupful of milk or water. Melt the butter in a saucepan, add the treacle and let it get warm but not very hot ; beat the eggs. Mix all the dry ingredients, then stir in the liquids, mix and beat all well together and bake in a paper-lined tin for two hours in a very moderate oven, which should not be opened for the first hour. LIVERPOOL CAKE. Required : Three-quarters of a pound of self-raising flour, two ounces of lard, two ounces of butter, six ounces of caster sugar, two ounces of candied peel, three eggs, half a pound of currants, a little milk, one teaspoonful of powdered ginger, half an ounce of caraway seeds. R\ib the butter and lard into the flour, add the- dry ingredients to it, beat the yolks with the milk and stir in the whisked whites and bake for about an hour and a half in a
moderate oven
