RESEARCH R ESULTS. (By Telegraph—Ber Press Association., HAWERA, July 13. Ine Hawera Star published to-day eleven columns of a report oil cheese factory yields, made by Mr P. 0. Yeale, Research Chemist in charge oi the local Dairy Laboratory. The report, which is considered to he of importance to the industry, examines the reasons why some factories, yields are consistently shown as higher than that of the great majority here and in other parts of the Dominion. The second section ot the report deals at length with the factors influencing the false or theoretical calculation oi yield, and shows how satisfactory, or even high yields may lie evolved without any true improvement in factory management, and without any actual benefit to the supplier. In this section, the influence of the test is very thoroughly considered. The process ot part-skimming is also shown to haw a hearing on this aspect of the quest-
After summarising the real and artificial factors, which have an influence on the yield, the report concludes with a paragraph devoted to the elfeet of the yield on the pay-out of the factory, showing, among other things, that though the supplier to a high-yield factory may receive a higher price per lb of butter fat, it is possible, that, through the reading down of the test, he may receive no more in the aggregate than the supplier of a similar quality of milk to a lowerpaying factory. The final measure of prosperity of cheese factory suppliers, the report contends, is the return he secures nor acre.
