Rabbit Pie. , Spinach, Harvard Beets, Feathered Potatoes. Orange Pudding.

Rabbit Pie.—l large rabbit, Jib bacon, 1 tablespoon chopped parsley, £ medium-sized onion, chopped, 1 hard boiled egg, salt and pepper, pastry dough.

Wash rabbit in salted water, drain and cut into suitable pieces. Dry thoroughly and roll in seasoned flour and brown slightly in a little hot fat. Drain and place in a pie-dish. Cut bacon into small pieces and mix in with the rabbit. Slice egg, and sprinkle onion and parsley over rabbit. Pour in a small cupful of stock or water, place pastry holder in centre, and cover with a pie crust. Bake about 1£ hours.

Orange Pudding.—Jib flour, 4oz butter, 4oz castor sugar, 1 heaped teaspoon baking powder, 2" oranges, 3 eggs, 4 tablespoons milk, pinch salt.

Sift flour, baking powder, and salt together. Rub in butter. Grate rind of oranges, add to the sugar and mix both in with the flour, etc. Add wellbeaten eggs and milk, beating all well together. Turn into a well-buttered pudding basin and steam 1J hours. Serve with custard sauce.
