Cold Meat Cornucopias. Vegetable Salad, Kumera Cakes. Gooseberry Sponge Pudding. Cold Meat Cornucopias.—Chop finely one cup celery; 2 hard-boiled eggs, and mix with one cup of cold green peas. If desired, add six sliced stuffed olives. Toss with mayonnaise until well moistened. Place a large spoonful of this mixture in centre of thinly-cut slices of any cold meat. Roll up into a cornucopia and skewer with a toothpick. Serve in individual lettuce leaves or on a bed of shredded lettuce, surrounded with slices of cold new potatoes and beetroot, or with a continuation of salad greens, etc.

Gooseberry Sponge Pudding.—Stew gooseberries with sugar, then press pulp through a sieve. To the pulp add the well-beaten yolks of two eggs, 1J oz butter, and the grated rind of one small lemon. If necessary, add extra sugar to remove tart flavdur of fruit. Work in one heaped pup of stale sponge cake crumbs. Line a heat-proof dish with flaky pastry rolled out very thinly, fill with the gooseberry mixture, and bake in a quick oven for half an hour. Cover with a meringue made of stiffly-beaten egg whites and sugar, and return to oven to brown.
